Summer Salsa

½ medium onion
3 baby carrots
¼ to ½ jalapeno pepper (depends on how hot you like it)
1/3 cup fresh cilantro
1 14 ½ oz. Can diced tomatoes
1 tsp. Adobo seasoning (found in Mexican food aisle)

In bowl of food processor or blender, pulse onion, carrots, pepper and cilantro until chopped, but not too fine. Add tomatoes and seasoning and pulse until well mixed.
Serve with chips.
